Making up almost 11% of all plantings in South Africa, Cabernet Sauvignon is the most popular cultivar in the country. Originally a spontaneous crossing between Cabernet Franc and Sauvignon Blanc it is associated with some of the most expensive wines in the world. Cabernet Sauvignon is very adaptable and is found all across the world, however, to produce a high-quality Cab you need very specific soils and a long harvest season because its late ripening characteristics. The terroir in Stellenbosch offers some of the best conditions for this cultivar in the world and unsurprisingly it is the most planted cultivar in the region. Setting the benchmark for the South African industry and creating renowned wines internationally.
On Goede Hoop we are fortunate enough to be a part of this terroir and Cab’s from the farm has consistently been of the highest quality. With the use of our traditional “kuipe” (open top cement fermenter) we create big, bold, full-bodied wines. Barrel matured in second and third fill barrels for 24 months the 2015 Cabernet Sauvignon has been bottle matured for a further 5 years prior to release to create a wine that has a beautiful balance between its tannin structure and dark berry character. The extended bottle maturation creates a full-bodied wine that doesn’t dominate the palate but still has the fresh berry flavours we have come to know and love about a good Cab. A unique experience that can only be achieved by the maturation of wine. Something we firmly believe in.
